I saw these cute little cupcakes at The Southern Institue and knew straight away I would have to try making them for my daughter’s preschool Easter concert. Aren’t they the cutest!!!
Here is how mine turned out …
They were super easy to make. I used a packet Lemon Cake mix and the supplied lemon icing.
Then I toasted some shredded coconut, which I have never done before, and it tasted yummo! I’m not a huge fan of coconut, but for this I’ll make an exception.
Then I cut a Cadbury mini egg in half and placed it on top with a mini chicken I got from the Dollar shop. I had to secure them with a dab of icing which worked perfectly.
So not only did they look cute, they tasted amazing!
And the kids at preschool loved them!
