Big confession. Are you ready? I … have … never … baked … cookies … before.
I know, shame, shame, shame.
But the good news is that after only one try, I am now an expert cookie maker and already experimenting with different flavours. And if I can, you can too. 🙂
When I came across a cookie recipe with a cake mix base, I knew it was time to give them a try. I’ve made many cupcakes in my time, and these sounded just as simple.
So here is the super duper simple secret recipe.
It’s as easy as mixing your boxed cake mix with 1/3 cup of vegetable oil and 2 eggs. The mixture should be dry enough to handle. Then roll a tablespoon ball of mixture in icing sugar. Place on baking tray and bake for 7 minutes at 180 degrees fan force.

Let cool for approx 10 minutes, then enjoy the fluffy chewy inside and slightly crunchy outside.
I started with a Lemon flavoured cake mix and have to admit these are my absolute favourite! To my first batch I added some fresh lemon juice and grated lemon rind. But the second attempt I left them out totally and didn’t find much difference in flavour. So if you have them, you can add them, and if not, I don’t think anyone is going to notice.
I also tried a chocolate cake mix yesterday and these turned out similar to chocolate brownies. Delicious brownies!! I’m guessing you could add some choc chips, but I tend to always burn chocolate. Have you ever eaten burnt chocolate. Not nice at all.
Next I’d like to try an orange and poppy seed cookies. Mmm…
I’m also thinking these scrumptious little cookies will make the perfect Christmas presents for family, friends, neighbours and teachers. I’ll be baking up a storm in December! 🙂 Did I mention they freeze well too so you can have an emergency stash in case visitors drop in.
